Double Chocolate Cookies - A Healthy Cookie that tastes Incredible!



  • 1 cup whole wheat flour
  • 2 Tbsp Chocolate soy milk
  • 1 egg
  • 1-2 Tbsp Cold Pressed/Virgin Olive Oil
  • 2-3 tsp baking powder
  • Tbsp Skim Milk powder (optional)
  • 2 Tbsp Cocoa Powder ( Pure dark cocoa)
  • 1/4 Cup agave or Maple Syrup
  • dark chocolate chips (optional)


Makes about 10 cookies. Preheat the oven and Bake at 375 F for only 10 minutes! Let them cool at least 10 minutes and Enjoy!
This recipe has less fat and sweetener than most recipes for cookies, yet they taste really good and can even be used as part of a healthy breakfast. They have less sugar and fat than many cereals and granola's,  and are high in fiber! So have a cookie with a bowl of plain Yoghurt and fruit and that will create a pretty wholesome breakfast!



Why is eating healthy so challenging in our society?

Sometimes it seems that even when you try to make the healthy choice you later find out you were mislead by tricky marketing and that in fact what you are eating is far from healthy. Health and Whole Foods go together. In most simplistic terms it means as close to nature the food is, the more whole it is. Obviously anything in a box or can is a “processed” food. Many people go out of their way to find a healthy breakfast meal, a way to start their day off right. And so people turn to cereal bars and boxed cereal with claims of “omega 3 added” and “high fiber” “good for your heart”, the claims go on and on.

In reality these convenience foods have been processed many times over and so although it may seem daunting “what can I eat!?” The reality is if you plan a little you can have a fast healthy and nurturing breakfast that will be more satisfying and keep you full longer.

Below I add a sample breakfast, it occurred to me that an astounding number of people enjoy “Rice Krispies” and other rice cereals, and I wondered Why not just Eat Real Rice!?

I recommend using a brown rice and cook it the day or night before so that it is all ready. I surely understand that most people don’t have an hour to wait for Brown Rice to cook. That is what I mean by minor planning pays off big!

Healthy Breakfast Alternative to Boxed Cereals and Bars:

·         ½ Cup Brown rice (cooked the night before, feel free to enlarge your serving  (Rich in B-Vitamins, which help to relax you)

·         An Apple cut in cubes/squares, (a cleansing fruit with pectin and lots of fibre!)

·         A lot of cinnamon (or however much you like, cinnamon is good for controlling blood sugar levels)

Cook this all together on medium heat, add some water about a ¼ cup or so, you don’t want it to burn! It takes just a few minutes to warm it up

Then after it is cooked you can add a tsp of maple syrup for taste and a teaspoon of flax oil for heart and brain health - rich in Omega 3 fats. Feel free to add milk ( which adds protein)

It’s quick and simple, takes less than 5 minutes to prepare. Enjoy a warm and wholesome breakfast.

The truth is you can also have the brown rice cold and add nuts and/or dried fruit, be creative. Whatever you want out of a cereal, you can make it easily. Don’t limit yourself, expand the possibilities.
